To be able to control diabetes, it is important to understand the disease, its symptoms and causes, and the basic principles of good dietary management.

Diabetes mellitus is a condition in which the body is unable to control the level of glucose in the blood.

There are two main types of diabetes mellitus, known as type 1 diabetes (insulin-dependent diabetes mellitus) and type 2 diabetes (non-insulin-dependent diabetes mellitus). Type 1 diabetes occurs when the pancreas does not make the insulin that is required to carry the glucose in the blood into the body tissues. Type 1 diabetes must therefore be treated with daily injections of insulin. Type 2 diabetes occurs when the pancreas does not make enough insulin, or the insulin does not work effectively. Type 2 diabetes is often associated with being overweight, as fat stops the insulin from carrying the glucose into body tissues. Emotional stress, illness, infection, and steroid treatment may also cause insulin resistance.

 

Sally’s Story

SALLY HAD BEEN UNWELL FOR SEVERAL MONTHS, but had not known why. Tests run by her doctor revealed that Sally had type 1 diabetes. Her doctor explained to Sally the need for daily insulin injections and the need to modify her diet.

Sally was placed on a regimen of insulin injections, with the dosage divided into two, one injection before breakfast and the other before her evening meal. She was apprehensive about the procedure at first, but soon became used to it.

Sally’s problem was compounded by the fact that she also had celiac disease. This meant she had an intolerance to gluten in her diet. Sally was given an appointment to see the dietitian at the local hospital. It was the dietitian’s ongoing support that helped Sally to follow a healthy eating program. She also had a very supportive family who rallied round and helped her through the early weeks.

At first Sally found it difficult to explain to her workmates and her friends that there might be times when she would need their help. Her workmates were considerate of her situation and she was able to build up her confidence. As Sally sometimes experienced hypoglycemia, she soon realized the need to tell those around her of the symptoms she might experience and the need for immediate sugar. In the end Sally decided that it was best to tell everyone who might need to know about her having diabetes, as people couldn’t be expected to understand if they didn’t know about it.

MEASUREMENTS IN THIS BOOK ARE MADE using U.S. standard unit cup and spoon measures. All spoon measurements are level spoonfuls, unless otherwise stated.

A standard kitchen scale is necessary for some of the recipes in which dry ingredients are listed by weight (ounces and/or pounds).

It is very difficult to advise on exact oven temperatures. Different makes of stoves give different results at the same temperature setting. You are the best judge of the heat settings of your own stove for the particular product you are cooking. The cooking time for a product can vary greatly between different kinds of stoves. Fan-forced ovens in the newer stoves have reduced cooking times considerably. Also, many of the foods in this book can be successfully prepared in a microwave oven. In this case, cooking times will be greatly reduced, and further variations in cooking time are possible depending on the heat setting chosen. The table “Oven Temperatures” should be a helpful guide to making appropriate selections.

This is a very easy recipe to prepare.

PREPARATION TIME: 5 minutes • YIELD: 10 servings
7 oz mashed avocado (approx. 1 avocado)

7 oz low-fat natural yogurt
1 clove garlic, crushed

¼ teaspoon chili powder
1 tablespoon chives, finely chopped

Mix all the ingredients together in a small bowl. Serve as desired.

NUTRITIONAL ANALYSIS

This is a delicious way of preparing cheese for hors d’oeuvres.

PREPARATION TIME: 7 minutes • YIELD: 20 servings
8 oz low-fat mature cheddar cheese, finely grated

7 oz ricotta cheese
7 oz soft light cream cheese
¼ cup brandy
3½ oz toasted almond slivers

1. Place all the ingredients into the bowl of an electric food processor or blender and blend until smooth.

2. Place into a serving dish. Chill until required.

NUTRITIONAL ANALYSIS

Serve this sauce with Crêpe Rolls (see recipe on page 22) YIELD: 7 servings of 1¼ tablespoons each
